October/November 2005, The EatingWell Healthy in a Hurry Cookbook (2006)

Your rating: None Average: 4 (92 votes)

Our updated Sloppy Joe takes lean ground beef and adds chopped cremini mushrooms and diced fresh plum tomatoes, all in a zesty sauce. Served on a whole-wheat bun, it's a hearty dinner sandwich that will please adults and kids alike.

READER'S COMMENT:
"This is so good! Instead of the ketchup/chili sauce I used tomato puree, added 2 cloves of crushed garlic, a liberal sprinkling of chili powder, a dash of cayenne, and just a bit of honey. Looking forward to the leftovers! "

My son did this for his exam piece. It went well not sure of his mark yet. It tasted great and we also left out the vinegar.

It was good, I followed the above suggestions. It was kind of runny but its "sloppy" joe.

This was excellent! One of the best sloppy joes I've ever had. I did take into consideration other's comments and only added a splash of the vinegar. Even my very picky kids liked it. I will definitely make this again!

These were really very good - they got rave reviews at my house which isn't very common with my "makeover" type recipies.

It was a little too vinegar tasting for us, so next time I won't add as much. Otherwise it was very good and even my mushroom hating husband brought the leftovers for his lunch!
