I cannot find Pastry flour anywhere. Any suggestions of what you can substitute or where to find it?

I use a combination of 1/2 whole wheat flour with 1/2 cake flour for whole wheat pastry flour. The goal is to cook with less gluten which is what cake flour has. Your baked goods should turn out lighter than when using all-purpose flour.
