Double-Chocolate Biscotti

Dense and crunchy, these are the classic Italian dunking cookies. Although they are traditionally dipped in Vin Santo, a sweet Italian dessert wine, these chocolaty biscotti are ultra-satisfying with a cup of coffee or a glass of milk.

I cannot find Pastry flour anywhere. Any suggestions of what you can substitute or where to find it?

Any health food store that carries groceries will have it, also Whole Foods.

I use a combination of 1/2 whole wheat flour with 1/2 cake flour for whole wheat pastry flour. The goal is to cook with less gluten which is what cake flour has. Your baked goods should turn out lighter than when using all-purpose flour.
