I thought this turned out pretty good. I expected the yogurt sauce to burn on the chicken but it actually worked really well. I liked the mango salad more than my husband did, but it wasn't bad by any means. A nice summery meal! I cooked this last night and me and my family loved it. I couldn't find mango chutney so I used apricot preserves and it was really good. My daughter (who is really picky) loves the food from this site. I'm really glad I ran across it.
I didn't make the mango salad, but I made the curried chicken. I made this recipe with skinless, boneless chicken thighs, grilled them in a grill pan, and they came out perfect! I used greek non-fat yogurt so I had to thin the marinade out a little with a splash of water. Also, did not have mango chutney on hand so I substituted an all fruit mango jelly in the marinade. Everything turned out delicious! My husband told me that he can't wait until I make this again! I served the chicken with brown basmati rice and creamy garlic green beans from EatingWell.com. Also, a great recipe. A hit all around!
Was fantastic, i marinated my chicken in the yogurt/garam masala/mango chutney mixture for 20minutes before grilling the bbq. It was fantastic. So flavourful. I may have added abit more chutney to the mix though. Also put the mango salsa over a bed of baby spinach with crushed cashews, avocado and halved cherry tomatoes. Awesome. Am going to try this recipe tonight and use on kebabs
