Cucumber-Mint Raita

Tame the heat of curries with this cool sauce, or serve it on Curried Cashew Burgers.

Makes about 1 3/4 cups

ACTIVE TIME: 10 minutes

TOTAL TIME: 10 minutes

EASE OF PREPARATION: Easy

1 cup nonfat plain yogurt
1 tablespoon fresh lime juice
1 tablespoon chopped fresh mint
1 teaspoon ground cumin
1 medium cucumber, peeled and diced (1 cup)
Salt & freshly ground pepper to taste

Whisk yogurt, lime juice, mint and cumin in a small bowl. Stir in cucumber; season with salt and pepper.

NUTRITION INFORMATION: Per tablespoon: 7 calories; 0 g fat (0 g sat, 0 g mono); 1 mg cholesterol; 1 g carbohydrate; 1 g protein; 0 g fiber; 28 mg sodium; 29 mg potassium.

This is a must have recipe. I used it on the curried cashew burgers, add it to my egg salad, use it as a dip for fresh veg... the possiblities are endless! And with 7 calories, no fat, and 1g of protien, it subs for any dip/spread without the guilt! I used english cukes and the kids loved it.
