An easy salad to serve with grilled chicken or steak for supper or on a bed of greens for a satisfying lunch. Substitute white beans or chickpeas for the black-eyed peas if you prefer.

I also substituted chick peas for the black eyed peas and diced radishes instead of the red onions. I'm thinking of trying black beans next time & maybe adding some shredded carrots. I didn't have lemons so I used lime juice and it was fine. I'm planning on making this a regular summertime meal by adding chicken or shrimp and maybe some whole wheat pasta. Nice, simple, fresh recipe!

This is an awesome and simple salad. I used chickpeas instead of black-eyed beans, and also drizzled it with sesame seed oil for a nutty flavor.
