This was very very good. I made it with chicken and it was a great substitute for mashed potatoes. I added a little extra butter, but not much. I will definitely make this again.

I cleaned and cut up one head then put in Vita-mixer and made warm soup. Put in a big bowl and added 1/2 c non fat sour cream and topped with 4 tbs shredded parm....good for my heart.

I was surprised that I liked this...I do not really like cooked cauliflower. I did not have buttermilk, so I used fat free sour cream instead. I also cooked the garlic in the olive oil separately until it was very lightly browned.
