There's no reason to only use cucumbers raw—they are wonderful sautéed then pureed with avocado for a silken-textured soup that's good warm or cold.

My husband and I loved this soup. Needed just a bit more salt, otherwise the recipe is perfect as it is.

This recipe is a keeper. It was great! I used leeks instead of the onion, and I added a little bit of lemon zest at the end. VERY delicious.

My whole family liked this soup. My husband loved it cold. I like it hot. My one year old just plan liked it. He asked for more 3 times! My four year old ate it, which is a great general endorsement. I also love the way it uses cucumbers! Because they're cooked I froze some and hope it'll be OK when I thaw it. If so I've found a great way to keep cucumber for the long Minnesota winter!
