Have made this many times, i keep coming back. Its fast and easy, my picky boyfriend even helped me make it he liked it so much. I tweak it sometimes but no changes are necessary
Creamy Avocado & White Bean Wrap

White beans mashed with ripe avocado and blended with sharp Cheddar and onion makes an incredibly rich, flavorful filling for this wrap. The tangy, spicy slaw adds crunch. A pinch (or more) of ground chipotle pepper and an extra dash of cider vinegar can be used in place of the canned chipotles in adobo sauce. Serve with tortilla chips, salsa and Tecate beer.

A great success. We'll definitely make it again. For anyone else who's in Stockholm, Sweden, and looking for canned chipotles in adobo sauce, there is a store at the Skanstull subway exit called "Extreme Foods" and they have it, along with a bunch of other hot sauces. We are interested in adding more cilantro next time.
All that great Mexican restaurant taste without all those unhealthy trappings. A great summer dish b/c you don't use any heat (no oven, no stovetop, no microwave), except those delicious chipotles in adobo! I'll be making the slaw portion as a side dish to the portobello quesadillas also an Eating Well recipe. This is easily the most delicious recipe I've EVER made.
This was SO good and SO simple! This will definitely become a regular lunch or dinner for me. I replaced the vinegar with fresh squeezed lime juice, and I'd highly recommend that to others who love the fresh taste of lime. I also added a little more chipotle and cilantro. The left overs aren't as pretty as the avocado tends to oxidize, but that doesn't change the flavor at all. Perfect for a hot summer night, or a packed lunch. If you aren't sure if you should make this, do it! You will be glad you did!
I tried this recipe for the first time today, and it is absolutely delicious! Very easy to prep, and best of all, our 2-yr old, who can be a fussy eater at times, absolutely loved it -- he couldn't get enough! How great that I could get beans, avocado, cabbage, carrots and whole wheat (tortilla) into my son in one meal! This is going to become a staple for us. The only thing I changed slightly was to add a little extra oil, vinegar and chipotle than the recipe recommends as I thought the dressing was a bit scant, and we prefer spicier food. But otherwise, it is perfect.
