Even my husband who usually despises spinach liked this. Used frozen spinach and it was super easy. This will definitely be in our rotation.

I loved the idea from another reader who substituted Hummus for the mayo. I did that and I also added minced shallots because I had a piece in the frig that needed using. I will definitely make this again.
I also used 1 lb. of fresh spinach, 2 cloves garlic (minced), 1/4 c. skim milk & 1/4 c. spicy hummus -- instead of the mayonnaise -- used only 2 T. bread crumbs along w/2 T. parmesan. It was absolutely delicious & will make over & over again, but will have to double or triple recipe (when rest of kids are home). There was just enough for myself, husband & son (of course, they had much bigger servings because it's so good!! I wanted more, but, I'm trying to watch my calorie intake :) for a while.
I used fresh spinach, a little extra garlic and skim milk. It tasted absolutely decadent! Delicious! I will be making this often!
