This is such a good soup! I used chicken stock instead of broth and for the rice I used one box of Uncle Ben's long grain and wild rice fast cooking blend. I also added about 1/3 to 1/2 of the spice packet that comes with the rice to the soup. So delicious!

This rescipe is a keeper. What a great way to follow the Thankgving turkey with a tastey and low calorie meal. Everybody in may family enjoyed the soup ans suggested that we have it again before we use up all the turkey leftovers.
We really like this soup. It was easy and used ingredients already on hand...quite a nice way to finish off some leftover turkey.
This recipe is excellent. I did do a few things differently that made it a little more flavorful, however. I didn't use instant/quick cook wild rice. Instead I used Trader Joe's Wild Rice and boiled it with the turkey, covered, for about 20 minutes while I cut up the veggies. This made the rice, turkey and broth very flavorful. After I also added a cup of water to the mix when I added in the veggies. Delicious!
This is a very good base recipe. I did not measure my ingredients. I ended up needing to add a flour/water slurry to thicken it a bit more, however this was likely due to my having not measured the other ingredients. The boyfriend said it was delicious and all he said is it needed more black pepper. I did not tell him it was supposed to be healthy. He even packed up two bowls to take to work tomorrow. Next time, I will try to make some whole grain bread bowls to serve the soup in or else I'll be sure to have a good crusty, grainy bread with butter to serve with it.
