These quesadillas have an irresistibly creamy filling. They also make great appetizers. Make it a meal: Serve with your favorite salsa on top and a cup of black bean soup topped with chopped avocado.

Crab quesadillas made me quite crabby

When I read this recipe I thought the premise of orange zest and orange juice with cheese and crab was a little strange. Neglecting my gut feelings, I figured the recipe must work and be good, otherwise it wouldn't have gotten 4 out of 5 stars. WRONG! I should have read the other reviews before trying this recipe. The orange zest completely overpowered the dish, leaving a lingering bitterness in my mouth. Sadly, I couldn't even taste the crab. It seemed to get lost amongst all of the zest and cheesy goo. My boyfriend, also disappointed with this dish is making a variation as I type this. He is making a crab cake quesadilla. Cooking the crab into a crab cake, crumbling and mixing with the other ingredients, omitting the orange juice and orange zest. Sounds a lot better, we'll see how it turns out.

In theory sounded delicious: gooey cheese, delicate flakey crab

Disappointing

The orange zest & juice should be left out along with the jalapeno, both were way too strong, not leaving you with any sense of crab. I also left out the cilantro, personal preference. I'd probably add a little more cheese and not fry/grill if you plan on cutting these into triangles. I might try microwaving if I make them again. I had fresh caught crab and was looking forward to a great quesadilla, how disappointing.

I've Had Better

I tried this recipe in hopes that it would be great. I love the combo of cheese and crab. But this came out less tan appealing.. It tasted downright disgusting. Even with salsa. I do not recommend this recipe.

I made this omitting the orange zest and cilantro as others suggested and added juice of 1/2 lemon, a sprinkle of garlic powder, dash of worchestershire sauce and substituted sealegs for crab. We microwaved them for 45 seconds. Everyone loved them.
