These quesadillas have an irresistibly creamy filling. They also make great appetizers. Make it a meal: Serve with your favorite salsa on top and a cup of black bean soup topped with chopped avocado.

I made these at our tailgate for the Texans vs 49ers game. Turned out really really good. It was easy, just prepped the filling and left out the crab and jalapenos until the morning, put that in when we got to the lot. Took a scoop put it on a tortilla and pushed them together, threw them on the grill.

Everyone loved them, and this is why Houston was voted the #1 tailgating stadium in the NFL!

This is my husband's and my favorite recipe! However, we highly recommend against using the cilantro and orange zest because they make it way too citrusy. I also add a little more cheddar cheese and cream cheese and I spread butter on the outside of the shells instead of using canola oil.
