Simple couscous gets an upgrade with sautéed mushrooms and sun-dried tomatoes. Make it a meal: Simple Roasted Pork Tenderloin and Wilted Spinach with Garlic make nice accompaniments.

Delicious quick and adaptable

I made this low fat and vegan...carmelized the onions in a dry pan and deglazed w/a bit of water, and used a vegan bullion cube instead of chicken broth. I also added some dried thyme as the mushrooms/onions were finishing. It was delicious, fast and satisfying. I'll try it next time with the giant Israeli couscous. This made a great meal and would be adaptable with many different additions.

Quick and easy side dish

This recipe is good and it is very quick and easy to prepare. I'll add some olives and/or feta cheese next time to see how it tastes.

Love this!

I loved this recipe -- the only thing I did differently was I used sodium-free chicken boullion mixed with warm water instead of the low-sodium broth, but the overall taste was delicious! I am normally not crazy about sun-dried tomatoes but I didn't mind them in this! I would definitely make this again!
