This updated picnic potato salad gets subtle flavor from smoked ham. If you can find them, small, thin-skinned early potatoes are best in this salad.

Made this for the 4th of July and it was great! A nice, light dish--much better than heavier potato salad doused in mayo. Could have used a little mustard or something else to give it some zing.

I made this for our mother's day brunch this year and it was a hit! Could have used a bit more egg though (but I just love egg in my potato salad :])
