Made with fresh summer vegetables and the best fruits of summer, these dishes are full of vitamins, minerals and antioxidants, and swap unhealthy saturated fats with healthy monounsaturated ones. Healthy Summer Potluck Tips

Freeze summer’s bounty. To freeze fresh berries, wash berries and pat dry. Spread in a single layer on a tray, cover with plastic wrap and freeze until solid. Pack the frozen fruit into sealable plastic bags, taking care to remove air from the bags. Freeze for up to 1 year.

Hard-boil eggs like a pro. A hard-boiled egg makes an excellent protein-rich snack or topper for a salad. Place eggs in a single layer in a saucepan; cover with water. Bring to a simmer over medium-high heat. Reduce heat to low and cook at the barest simmer for 10 minutes. Remove from heat, pour out hot water and fill the pan with a mixture of cold water and ice cubes. Let stand until cool enough to handle before peeling.
