Healthy recipes for garlic lovers

Alice May Brock wrote in Alice’s Restaurant Cookbook (1969), “Tomatoes and oregano make it Italian; wine and tarragon make it French. Sour cream makes it Russian; lemon and cinnamon make it Greek. Soy sauce makes it Chinese; garlic makes it good.” Indeed, you’ll be hard-pressed to find a savory recipe that doesn’t use garlic. Springtime brings garlic scapes—the coiled green shoots that grows out of young garlic—to farmers’ markets, while summer is the best time to find heirloom varieties of garlic, such as Rocambole, Purple Stripe and Chesnok Red. Luckily for us, though, garlic’s available year-round. Peel some cloves and start chopping—these healthy recipes are big on garlic flavor.

Healthy Garlic Cooking Tips

  • To roast garlic: Preheat oven to 350°F. Place each head of garlic on a piece of foil, drizzle with 1 teaspoon oil and wrap into a package. Place the packages directly on the oven rack and roast until cloves are soft, 30 to 40 minutes.
  • To make garlic-flavored vinegar: Place 2 cloves peeled garlic in 1 cup red- or white-wine vinegar and let stand at room temperature for 30 minutes. Discard the garlic. Store in the refrigerator.
  • Garlic oil is oil that has been infused with fresh garlic. We like to use it for salad dressings, as dipping oil with crusty bread, in marinades or to simply drizzle over steamed vegetables. Find it at well-stocked supermarkets or at boyajianinc.com.
