Healthy Burger Tips

  • The fat content of ground bison (buffalo) is not always labeled and varies depending on the producer. We like Great Range Brand, found in major supermarkets across the country—it has 4 grams of saturated fat per serving. You can substitute 90%-lean ground beef.
  • Adding a leaner, neutral-tasting meat like turkey to a fattier cut like lamb reduces saturated fat and cholesterol.
  • A ridged grill pan is great for indoor grilling. It's ridges keep the fat away from the cooking meat.
  • When forming burger patties, make them thinner at the center to prevent them from steaming as they cook.
  • To oil a grill rack: Oil a folded paper towel. Hold it with tongs and pull it toward you over the rack. Do not use cooking spray on a hot grill.
