Sweet treats that will boost your antioxidants

Longing for a sweet after-dinner treat but don’t have hours to spend on a complicated layer cake? These light desserts are not only a quick way to satisfy your sweet tooth—they can be prepared in 15 minutes or less—but they are also a delicious way to get antioxidant-rich fruit into your diet.

Consider filling store-bought crepes with a quick fruit compote or using that same compote to top vanilla ice cream.  Don’t want to cook? Quick frozen yogurts are only minutes away. Or simply toss fresh berries with a little bit of sugar and citrus zest for a luscious treat. So go ahead and have dessert—these quick recipes will make you feel good about doing having a sweet after-dinner treat.

Healthy 15-Minute Fruit Dessert Tips

Segment Citrus Fruit
With a sharp knife, remove the skin and white pith from the fruit. Working over a bowl, cut the segments from their surrounding membranes. Squeeze juice into the bowl before discarding the membranes.

Toast Coconut
Place coconut in a small dry skillet and cook, stirring often, until golden, about 5 minutes or spread in a shallow baking dish and bake at 350°F until light golden and fragrant, 5 to 10 minutes.
