I freeze these individually in small containers and pack them in our lunches. They are more like a slushy by noon and are delicious. My daughter thinks they would be better as traditional popsicles with a stick in them .

Make sure to reserve a portion of the peaches as you puree the mixture so the pops will be packed with icy cold, chunky bits of fruit. For a grown-up twist, try adding 1 to 2 teaspoons finely chopped fresh mint, lemon verbena or basil.

I've been excited about these for a couple weeks now and finally made them. I put in the vanilla because I thought it would be nuanced and bring together the overall flavor -- but it wasn't and it didn't. I would skip the vanilla altogether *UNLESS* you're looking for a dreamsicle-style popsicle (I was not). The orange juice and vanilla made the peaches irrelevant. Next time, I'll probably do just peaches and citrus juice (and sugar) for something a little brighter and peachier.
This is so good and easy to make. You can mix up the juice try apple or pineapple.
I used fresh peaches from the farmers' market and substituted milk for the orange juice (I didn't have any). I was also pretty liberal with the vanilla extract. My concoction was so delish! It tasted like Creamsicles but without the calories. Yummy!
