Inspired by the (now) old-school, ultra-rich, mousselike chocolate cake that usually called for a whole pound of chocolate, half a dozen eggs and lots of butter, here is an enlightened rendition with deep bittersweet chocolate flavor and that dense melt-in-your-mouth texture so characteristic of the genre. No one will guess it’s healthier. The secret is excellent natural cocoa powder and good-quality bittersweet chocolate, preferably with 70% cacao. Although the cake can be eaten once it’s completely cool, it comes out of the pan much easier and even tastes better if it has been chilled at least overnight.

Wonderful!

This was a bit time consuming to make, but worth the effort. The dark rich chocolate was amazing. It tasted like the "chocolate pate" you can get in some expensive restaurants. A big hit, and definitely moving into the family favourite collection.

Devine Chocolate Decadence

We all loved this. I made it exactly per the recipe (minus the orange peel) and wouldn't change a thing. Very rich and chocolatey!

A little too much chocolate.

Mine did not come out nearly as pretty as the picture. The flavor was really intense. I didn't make the candied orange peel, which would have probably been a nice contrast.

A small serving size is very satisfying.
