Pears and delicata squash tossed with brown sugar, chili powder and bacon is a delectable combination. To make this vegetarian, omit the bacon and toss the squash and pears with the brown sugar and chili powder during the last 5 minutes of roasting.

"Loved this one. It will be a regular. I agree with the comments on the need for more bacon; For those with mushy pears, you may not have used a good variety. I'd advise asking your grocer which types hold up to baking better. "

Lots of opportunity to make it your own!

Tasted great but does every Delicata recipe have to use chili? Next time I'm trying Ginger or Cinnamon or both. My husband thinks that sounds better. I know it will be better for my GERD!
I used Turkey bacon, not much grease, and didn't need it.

Very tasty.

wonderful taste, easy to make

This recipe yields a tasty dish with the right texture.
However, I rarely (if ever) use bacon, do not like handling it (also not too healthy...), so next time I'll probably add butter instead. Just to add my twist on it: some toasted walnuts don't hurt.

Sweet and Spicy Squash

Never having used Delicata Squash I can't imagine a better recipe. Easy to make and different side dish.

Delicious!

I used 4 slices of bacon and added pulled chicken to make it a main dish. It was wonderful!

I served this as a salad over wilted spinach with a homemade mustard/tangerine juice/rice vinegar dressing. It was unbelievably good!
