Our version of this enchilada-style chilaquiles casserole is packed with nutritious beans and vegetables. Canned prepared enchilada sauce has great flavor and keeps the prep time quick. It can vary in heat level so find one that suits your taste. If you want to eliminate the heat altogether, try a green enchilada sauce (which is often milder than red) or substitute two 8-ounce cans of plain tomato sauce.

Addition's, Yes or No?

What is the purpose of using the recipe if you are going make additions? Be careful of 'any' additions, it adjusts the calorie, fat and carb content, as I am certain you all know this. People who are making changes to their eating plan might want to consider sticking to the recipe as is before they start venturing out on their own with new additions. I'm not trying to criticize, I have made a lot of adjustments to my eating habits over the years and I remember so clearly how just getting portion size under control was. For the more experienced crowd, the addition of healthy lowfat turkey is a great idea, the protein perks are perfection.

I agree that you have to be

I agree that you have to be careful as "adjusting" any recipe will affect the nutritional information. That being said, as a diabetic, I like to get extra protein when I can and added about 2 cups of chopped chicken, which was a very nice addition. I also adjusted the nutritional information to accomodate the change.

Delicious for Sure!

I liked this dish exactly the way it is. I love that I can add this vegetarian dish into my rotation without any complaints. I have made it several times now and haven't changed a thing. It's awesome because it has tremendous flavor and very low calories. A great NO MEAT night dinner. I serve it with a lime/cilantro slaw and some pico de gallo; my family gobbles it down!

Make This Tonight!

I read practically all 100+ reviews of this recipe and couldn't wait to get home to make it. I added 1 lb ground turkey and chopped my zucchini instead of grating it but pretty much stuck to the recipe for everything else. It was easy to make and delicious! My boyfriend and I loved it but he refused to believe it was healthy.

I too, read the reviews and added 1 lb of turkey, canned green chili's, fresh diced jalopeno's, garlic and some salsa and layered the tortilla's instead of slicing them. To the bottom layer of tortilla's I also added (1) of refried beans. Husband said this is a definite keeper and to put into "The Rotation" .

this dish was awesome because i added some things.. like some reviews said(**reviews are a great way to see if the dish is worth making***)
i did add :3 garlis cloves, minced.. ground turkey( i added about 1/2 pd. but next time a pound would be great..instead of(yellow)frozen corn i used WHITE frozen corn this makes a BIG difference and it's worth the extra money AND the bag i bought had 3 xtra oz. so i used the entire bag..a small can if chopped green chiles (not drained)..3 tsp chili powder and most important i kept the tortilla's WHOLE i didnt cut them up leaving them whole keeps the layers together next time i will add a small chopped jalapeno because i like heat... worth making!!! this is a family loved it...
