Leftover cooked chicken makes this chicken Waldorf salad, loaded with apples, grapes, celery and walnuts, a snap to assemble. If you use rotisserie chicken, keep in mind that it’s salty and omit the salt in the dressing. Serve over watercress, with a chunk of whole-grain baguette.

a yummy chicken salad

I made this salad using leftover chicken after making chicken soup from scratch. I was looking for a good way to use it up. The salad turned out great! I did make a few changes though: low fat sour creme instead of low fat yogurt, craisins instead of walnuts, and no grapes. I was very happy with the results. I think adding the lemon juice was a great idea

Quick Chicken Salad

This was a quick and easy recipe to come together. I used rotisserie chicken which was ok. Think I'll use canned chicken next time as the flavor is better to me.

This is a new favorite!

I love chicken salad, but often avoid it due to the high calorie and fat content. I am happy to say that this chicken salad has bridged the gap for me. I love the crunchiness from the celery and nuts. And the apple and grape add additional depth of flavor and texture. I used greek yogurt for extra richness and creaminess. This is a healthy chicken salad that left me wishing I had made a double batch!

Like the other reviewers, I love chicken salad but don't enjoy the guilt after eating it. This variation on traditional chicken salad is everybit as tasty with no guilt.

I used non-fat plain Greek yogurt. I also skipped the apple, and added dill, onions, parsley, and a pinch of onion powder and Splenda.

Loved the Yogurt

I really like using yogurt instead of mayo for this salad...makes me feel a bit better about it. And the other ingredients are all tasty and healthy. I made a version the other day but didn't have many of the ingredients - did just a pear, Gorgonzola, walnut salad served in endive http://tiny.cc/iw2q9. These are great healthy salad options.
