I made this salad for lunch and ate it with raw spinach and it was delicious! It didn't take long to prepare and it was a filing, light, well balanced meal. I did add some salt and pepper and substituted some chopped bell pepper and scallions instead of celery and it tasted great. I was nervous about the apples getting brown since I made this salad the night before I needed it, but the apples were still fine by the time I finished the salad 3 days after I made it. Good lunchtime salad and I will make it again!
