Caramelized sweet potatoes and red onion are the bed for chicken thighs that cook up fast in a very hot oven—perfect for a quick healthy chicken dinner. Serve with a fall salad of mixed greens, sliced apples and blue cheese.

I cooked this as a Monday night dinner. It was very easy to put together, with many ingredients that were already in my pantry. I would recommend, as some posters have, adding just a bit more olive oil to the vegetable mixture, as some of the potatoes and definitely the onions came out a bit dryer than I might've hoped. The chicken was truly the star of the meal, I erred on the side of 30 minutes rather than 35 when roasting, and the result was a fantastically delicious thigh that was juicy in the middle and crispy on the outside. I would definitely make this again!

Very flavorful!

Used chicken breast not thighs. Should have compensated by adding more olive oil. Maybe then the onion would have carmelized? Recommend more onion. Whole family enjoyed. Plan to try with rosemary instead of thyme.

Quick and easy to prepare, healthy, full of flavor.

One of the best

This is one of our favorite Eating Well recipes. It is easy and the flavors are outstanding. Cooking to 165 is perfect for the thighs. Sweet potatoes (garnet yams) are nice and healthy and with red onions make for a beautiful place. Great with broccoli, broccolini, or some other bitter green to off set all the caramelized sweetness. Highly recommend.
