Chicken Salad-Stuffed Tomatoes

Tuna, seafood or tofu salad would be a tasty filling for plum tomatoes as well.

EASE OF PREPARATION: Easy

4 plum tomatoes, halved
1/4 cup chicken salad
Freshly ground pepper to taste
2 teaspoons sliced fresh chives

Scoop out insides of tomatoes with a melon baller. Fill with chicken salad. Sprinkle with pepper and chives.

NUTRITION INFORMATION: Per serving: 51 calories; 2 g fat (1 g sat, 0 g mono); 12 mg cholesterol; 6 g carbohydrate; 5 g protein; 1 g fiber; 76 mg sodium; 214 mg potassium.

I made the chicken salad and added chopped onions and celery and some tofu cubes I had on hand. (also fresh basil). This was very tasty, especially with some warm bread from the oven.
