This fragrant, Italian-flavored soup takes advantage of quick-cooking ingredients—boneless, skinless chicken breast, bagged baby spinach and canned beans. It features a simple homemade basil pesto swirled in at the end to add a fresh herb flavor. If you are very pressed for time, you can substitute 3 to 4 tablespoons of a store-bought basil pesto.

This was fantastic and my first attempt at a soup. (Just recently found the sheer joy of cooking...and eating!)

Easy to prepare and the only thing I would change is maybe add a bit more chicken. Used both red pepper and carrots.

Delicious and filling. Perfect soup for that in-between meals and work-outs!

This will be a regular!

Great flavorful soup! I used kale instead of spinach (it's what I had) but I'm sure it's good with spinach as well.

Used Asiago cheese i/o Parmasean. SO awesome. Young and old alike all enjoyed this soup.
