I made this recipe last night for my roommate and I. There was enough for dinner and lunch. We were both tempted to eat our lunch portions as soon as dinner was done! This is a fantastic, easy to make dinner. I added a teaspoon of red pepper flakes with the broth for a little kick. I will be making this stew again and again.

Made this for the first time in early September. Air just starting to get that hint of fall. This was awesome! Really hit the spot. Has layers of subtle flavors that come shining through and is hearty enough for dinner, especially with some crusty bread. I usually spice up my dishes a bit but after tasting this I decided it was perfect as is. I had all of the ingredients on hand and it took about a half hour.
