Whole-wheat egg noodles add fiber and nutrients and reduced-sodium chicken broth cuts the sodium. By all means use homemade chicken broth if you have it.

Love this version of Chicken Noodle soup! Only thing I can say I really "modified" is, I think I really only put 2 tablespoons of fresh minched ginger, cause I'm not a huge ginger fan and I think I have more than a pound of chicken! =]

The ginger and dill added so much to the healthy and delicious taste of this chicken noodle soup. My cold flew the coup! I highly recommend this recipe.


I'm normally not a chicken noodle soup person at all since it usually tastes so bland no matter how much salt and pepper I add. But decided to make this super healthy version for my sick husband. Its seriously the tastiest chicken soup I've ever had! The dill and ginger make all the difference in the world!

Light and Flavorful!

This is the best chicken noodle soup I've ever made and will keep this in my permanent file! My kids loved it. I bought two roasted chickens and removed the skin and shredded the breast meat. I used organic broth and vegetables. I minced all vegetables so the soup wasn't so chunky except for the chicken and noodles. The combination of ginger, dill and lemon gave the soup flavor beyond belief!

Surprisingly Delicious!

I made this and even my 6 year old loved it!! She ate it every night for 3 days! This made plenty so I may cut the recipe in half next time.
