Chicken & Fruit Salad

July/August 2008

Your rating: None Average: 4.3 (84 votes)

Chicken, melon, walnuts and feta top mixed salad greens for a refreshing summer salad. Use your favorite summer fruit in place of the melon if you wish.

READER'S COMMENT:
"A light and refreshing summertime meal. Swapped the melon for apple and used apple-cider vinegar and it was great. We enjoyed the dressing so much, I made another batch for a salad later in the week. A keeper recipe. "

WAY too vinegary!!

I really liked this salad, but the dressing was super tart, due to all the vinegar. I actually made it a second time and cut the vinegar in half--so much better!

Light, fresh

Great summer meal!

We eat this kind of meal often during the summer in AZ. This recipe is easy to modify by using leftover grilled chicken, tofu or salmon. I just make more on the weekend and use it (or freeze it) for an easy weekday meal. I also vary the fruit- this is especially good with berries.

Delicious, easy, flexible recipe

SUGAR in this recipe!!!!

I am SO disappointed to read that you need sugar in this recipe. You may as well use mayo, b/c sugar is AWFUL for you AND not diabetes appropriate. So disapointed

No Mayo

Just don't put in the sugar.

Just don't put in the sugar. It's a recipe - not a statute.

excuse me, but have you tried this recipe? sugar isn't awful just because you have diabetes. don't be bitter... sweeten up that attitude a bit please.
