Chicken, melon, walnuts and feta top mixed salad greens for a refreshing summer salad. Use your favorite summer fruit in place of the melon if you wish.

"A light and refreshing summertime meal. Swapped the melon for apple and used apple-cider vinegar and it was great. We enjoyed the dressing so much, I made another batch for a salad later in the week. A keeper recipe. "

Nice Light Summer Salad

I made a few minor replacements in these recipe. Used Greek yogurt in place of sour cream, pecans instead of walnuts, and apple cider vinegar (instead of say, raspberry vinegar or similar). Didn't find the dressing too tart at all. In fact, with the added sugar it's too sweet, so I would say the poppy seeds and a good-tasting vinegar are enough.

Overall, I liked the flavor combo of the sweet dressing, melons, nuts, and feta. The chicken is a bit of an after-thought, though it adds protein and makes the salad more filling. Good for summer.

I used White Raspberry Balsamic and it came out great! And Purdue Shortcuts Carved Chicken Breast. The Chicken is very tasty and so easy.

Tip: skip the sugar entirely! It's still super delicious without it! My husband asked me to make him this salad again a few days later, and I happily obliged. A great way to start off the 28-day plan, and a great recipe all-around. Will be bringing it to potlucks. Yes, it's that good.

scrumptious dressing
WAY too vinegary!!

I really liked this salad, but the dressing was super tart, due to all the vinegar. I actually made it a second time and cut the vinegar in half--so much better!
