This has become a go-to weeknight meal. The hardest part of the whole recipe is chopping up the chicken breast, and it's good for four servings. I use almond milk (I just prefer it) and I double the spices. I use a good quality full-fat cheddar on top since the rest of the dish is fairly low in calories. It's really good with whole wheat egg noodles, if you can find them.

This was a great, simple recipe that we will now throw into our routine! I substituted cream of chicken for the mayo and added some garlic herb breadcrumbs on top of the cheese before broiling and this added a bit more flavor and warms up nicely for lunch leftovers!
My family really enjoyed this and I was pleased with how easy it was to throw together for a weeknight meal. We love heavily spiced and seasoned food, but sometimes mild, creamy comfort food is just what the doctor ordered, and this recipe fills that role nicely.
I'm wondering if different brands of mayonnaise are the reason why some reviewers are finding this overly bland or strangely. We use Hellmans Light, and it was perfect, but I can imagine some other brands I've tasted (and certainly Miracle Whip) resulting in a funny taste.
I though this was really good, and my whole family enjoyed it, most importantly my 5yo and 2yo. The noodles and chicken cooked up perfectly for me. The only issue I came across was the sauce and noodles stuck to the center of the pan...tried lowering the simmer and still stuck a bit, but it didn't cause any problems with the final product. Some might finds this meal bland, and it is a little bit, but sometimes that's what I'm in the mood for. Creamy comfort food, yum. Pretty healthy too. Would still be good with less cheese if you want to cut fat and calories a little bit. Will make this again.
Add a little more broth near the end as noodles were'nt quite done. Husband liked it, Son added spices thought it was bland and I loved it
