I made this dish and was VERY pleased! I used an onion instead of the shallot and Penne for the pasta. I added onion and garlic powders to the chicken while poaching, and It turned out great. Some will love it, some will hate it but I think it's a WIN! If you are looking for a fresh idea, try this!
Chicken & Blueberry Pasta Salad
From EatingWell: August/September 2006
Yes, blueberries and pasta. The addition of poached chicken and feta cheese makes this dish into a light and satisfying summer supper that's also great for a potluck. If you already have some leftover chicken, skip Step 1 and add shredded chicken in Step 4.

I wait every summer for blueberry season to come around just so i can make this dish. I've made it three years in a row now and I have to say, I like it even more every time I make it! The juicy chicken, the tangy feta, tart lime juice, and plump blueberries all together make an interesting and unique dish! I've also made this for company and they couldn't stop raving about it either! It makes a great light summer supper.
By the way, there are plenty or restaurants that poach chicken. It is the perfect way to cook the chicken for this dish so it adds flavor and doesn't compete with the other ingredients.
Worst dish I've ever made! My husband and I almost gagged tasting it. Glad I didn't boil the chicken, there's a reason why they don't offer it in restaurants, I was able to salvage the chicken on the grill. Kudos to whoever likes it, I HATED it.
I was so excited to make this but it was anything I would make again. Actually thought it tasted better cold.
