Carrot Saute with Ginger & Orange

Spiked with fresh ginger and orange juice, sauteed grated carrots make an appealing, textural side dish. To speed up preparation time, use a food processor to grate the carrots or purchase them already grated.

When I prepared this

When I prepared this following the recipe, the taste of the ginger was too strong---would recommend using only 1/2 the amount. It may be that the carrots I used were not sweet enough but it tasted somewhat bitter so I added 1 Tbsp. brown sugar and with that addition, it tasted much better.
