Dense, tasteless

I followed the recipe exactly. These muffins were a big disappointment because they did not rise, so they were really dense inside. The taste was bland even with the coconut and coconut oil. I think the carrots and excess applesauce affected the consistency and added to the blandness. The topping did not "stick" to the muffins since they did not rise, so when biting into the muffin, coconut and oatmeal dropped everywhere. If I make these again, I will reduce the carrots and applesauce by 25% to see if the muffin turns out a bit lighter.

Family liked this recipe!

I've been baking with whole wheat flour a lot. My kids use to healthy version of muffins. My daughter had a great time making those and she loved them when they were done. My husband liked it also. Yes they are not flaky soft muffins like some of you are use to but they are way more nutritious.

My changes i added flaxseed, doubled the recipe, used 1/2c apple sauce and 1c of grated apple and 1c carrots.
Added 1/2c cane sugar, 1tbs honey (i didn't have enough honey to i substituted with sugar). Would deff make those again and use maple syrup as sweetener.

Moist, Healthy and Good

My entire family loved these from 5 year old twins that never agree on anything to picky teenager, to us parents with different eating habits. The muffins came out moist (I used brand new baking powder) and just sweet enough. Since we love Craisins we used Cherry ones instead of raisins which may be what sold the kids. Now I am not sure if I should keep the kids away from these or allow them a few more.

After a rave review from a friend, I made this recipe last week only to end up with a small, overly dense and bland muffin. I appreciate the healthy substitutions (applesauce, honey) but would actually prefer to make these muffins sweeter and lighter. I haven't given up completely yet and will make them again, only this time I will reduce the grated carrots to 1 1/4C and will add pineapple to sweeten it up a little (I can't stand raisins in baked goods!)
