Carrot-Cumin Salad Recipe

Ingredients

  • 6 carrots, coarsely grated
  • 1/2 cup chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 clove garlic, finely chopped
  • 1 teaspoon ground cumin
  • Salt & freshly ground pepper, to taste

Preparation

  1. Combine carrots, parsley, lemon juice, oil, garlic and cumin in a medium bowl. Season to taste with salt and freshly ground pepper.

  • Make Ahead Tip: Cover and refrigerate for up to 1 day.
