The bananas have to get in and out of the pan in 1 1/2 minutes, no longer, so they stay firm in the center. If you are cooking for 4, you can easily double the recipe; it is important not to crowd the skillet, so get everything ready to go and make it in 2 batches.

Have just cooked this after reading it..I missed out the cinnamon as I can't bear the stuff but used spiced rum. Very quick and tasty, I served it on a sweet pancake with icecream and chocolate sauce. I would certainly consider serving it for a 'relaxed' dinner party!

This is a wonderful dessert! It is also very very impressive! I served it 3 nights in a row to different guests because I loved it so much! You need to try this.
