Just made this recipe for the first time and paid attention to all other comments to this point. I halved the noodles and added the blue cheese to the sauce so that it melted in rather than sprinkling it on the top. I also doubled the amount of hot sauce that the recipe called for to 8 total tablespoons. Instead of purchasing chicken breasts, I purchased a rotisserie chicken and used it instead. All in all, I do feel that this recipe is a great one, but only with the adjustments made. I also think that it needs more hot sauce, but that is just my opinion! :)

We took the classic flavors of Buffalo wings—hot sauce, blue cheese, carrots and celery—and created a finger-licking-good casserole. Serve this dish during football season to a hungry crowd and it’s sure to be a hit. We don’t typically recommend ingredients by brand name, but in this case we make an exception for Frank’s RedHot Sauce. It has the perfect balance of spice and tang for this casserole. Texas Pete and Crystal hot sauces are suitable alternatives if you can’t find Frank’s.

This was so tasty that everyone ate a little too much of it. One person alone ate four servings (granted, he's a big eater), but it was that good. I made it exactly by the recipe, except with skim milk, and it came out great.
Next time I will try to ease my conscience and make it a little more healthy, maybe double the veggies and reduce the pasta a bit; I think the recipe is tasty enough to take it and still be something we would really like.
Also I would bring this as-is to a potluck party where people usually eat unhealthy things, this would be a better substitute and I'm sure would go over well.
I love this dish, I really do. Why have mac & cheese when you could have buffalo chicken mac & cheese? Why have buffalo chicken wings when you could have buffalo chicken mac & cheese? My problem is this: it's not healthy. Healthy eating is clean eating- minimally processed foods. Just because you tell people to make the pasta whole grain doesn't make it healthy. Maybe it makes it less bad for you? Milk, cheese? Not healthy. Sometimes EatingWell makes me wonder with their recipes. There always seems to be so many overly processed ingredients, and that's not eating well
I made brown rice and swapped it for the pasta. I also bought a whole cooked rotisserie chicken and chopped it up and used it for the meat. The result was awesome!
I love anything with Frank's hot sauce in it! (I really do put that stuff on everything!) I made it for my dad and we both love spice; I over doubled the hot sauce and it still wasn't spicy enough for me. I added in canned tomatoes, as was mentioned before, and cut the milk to 2 3/4 cup. I added a bit more blue cheese, and used less noodles. In all honesty, I could have done without the extra blue cheese. It makes a ton of food! It's great for entertaining, or for using as leftovers all week at work! Dad loved it and said he wouldn't change anything about it!
