Buffalo Chicken Casserole

We took the classic flavors of Buffalo wings—hot sauce, blue cheese, carrots and celery—and created a finger-licking-good casserole. Serve this dish during football season to a hungry crowd and it’s sure to be a hit. We don’t typically recommend ingredients by brand name, but in this case we make an exception for Frank’s RedHot Sauce. It has the perfect balance of spice and tang for this casserole. Texas Pete and Crystal hot sauces are suitable alternatives if you can’t find Frank’s.

Was hoping for more

After drooling over the image of this recipe for months, I finally made it. I may have set my expectations a bit too high because I was disappointed in the lack of creaminess (though I understand that the point of the recipe is to lighten it up). I'm glad several people enjoy it as is, but I have decided that I will make this in a fuller-fat version. As a splurge meal, I will adapt the traditional mac and cheese by adding Frank's Red Hot, chicken and veggies and perhaps even add some buttered bread crumbs on the top. That way I will ge the flavour and texture that I would have liked from this recipe.

I made this recipe exactly as stated, but I shredded the carrots, celery and onions. It was wonderful. Only change I would make is to add more hot sauce. I will definitely make this one again.

bland and mismatched flavors

I love casseroles, but this was bland and terrible. Sure if you modify the recipe it might taste better, but it defeats the purpose of the healthy aspect. I don't recommend and we did throw out much of it, unfortunately. Very disappointed.

The sauce was OK but the recipe called for WAY too many noodles, I did not have enough sauce to cover everything. The result was bland and we threw out much of it.

Perfect for the game day crowd

We loved this easy casserole! Prepared exactly as written with rave reviews. Definitely enough for a crowd and the leftovers are delicious as well. I plan to take this to our next football gathering where I'm sure no one else will be bringing anything similar.
