The turkey makes it less fatty and gives it a healthier protein-rich taste. I used a lot of fennel and ground it up quite well using a mortar and pestle, that combine with the parsley made it very fresh and homemade tasting. The pistachios are an unexpected twist making these a unique addition to breakfast. I found shelled, unsalted pistachios at Trader Joe's; that's definitely the way to go. I doubled the recipe since turkey and sausage are usually sold in one pound packages, and divided it up into 20 patties and refrigerated them overnight. We cooked up the next morning and they were gone in a flash. People enjoyed them!

This breakfast sausage patty recipe transforms plain breakfast sausage into something special with a few simple additions. The surprise ingredient: pistachios! Plenty of black pepper and a big pinch of cayenne make this breakfast sausage pleasantly spicy—use less if you prefer. The recipe, which can be made ahead and refrigerated or frozen, yields 8 small sausage patties, but can easily be doubled and cooked in two batches.
