Bok Choy-Apple Slaw

August/September 2006

Your rating: None Average: 4.1 (35 votes)

Bok choy serves as a peppery alternative to cabbage in this crunchy and creamy slaw. Try it with barbecued chicken.

READER'S COMMENT:
"This was OK, but far from the best slaw recipe I have had. I am not sure if you aren't supposed to use the green part of the bok choy, as mine got soggy quickly. I'm not going to make this again. "

Best "odd" slaw ever!

I made this for the first time for four women--we loved it so much we ate it all even though it was 8 servings! I did not use sour cream, used 1/3 c real mayo b/c I didn't have the other, and used Greek yogurt (plain) and Greek yogurt (lime).

YUM

I love this salad with chicken and walnuts! I've added a little chicken breast for a complete meal.

The dressing is easy to switch ingredients and I've used it for other salads

This was great!

I used balsamic vinegar and Greek yogurt instead of the sour cream, turned out great.

Family loved it
