I've always had my sweet potatoes with butter and brown sugar. I wasn't sure how this savory middle eastern flavor would mix with a sweet potato, but I had to try it. I was completely won over at the first bite! These are wonderful. So flavorful, filling and packed full of nutrients, how can you go wrong? I used canned tomatoes instead of fresh and added a dash of cinnamon, which I highly recommend. Not only did the cinnamon compliment the other spices, but it also really brought out the flavor of the sweet potato. lonikloni |

I was hesitant about this dish but given my love for sweet potatoes and black beans, I decided it was worth a shot. It is delicious!!! The bean/tomato mixture mellows out the sweetness of the sweet potato. Cheap and satisfying....this one is a keeper! |

This recipe intrigued me when I saw it and they came out better than expected! To even shorten the time spent, substiute a can of diced tomatoes instead of using fresh tomatoes. I second the other comment and add diced jalepenos if you like heat. I didn't have any so I doused them with my favorite hot sauce (Tapatio) and it was fabulous! |

These are fantastic! Super quick and easy to put together and they taste great! The sour cream is a must. I cooked the potatoes half in the microwave finished them in the oven to get a crispier skin. I also added some finely chopped peppers and jalapeno peppers to the mixture. Topped them off w/ a little shredded cheddar, sour cream and chopped green onion tops. The husband and kids loved them too. |
