Pickled jalapeños, cilantro and avocado perk up convenient canned salmon for a quick tostada topping. Skip store-bought and make your own crispy shells in the oven. Serve with: Brown rice cooked with diced tomatoes and onions or salsa.

I was very pleasantly surprised at how easy and delicious this recipe was. My kids don't like spicy food, so I used red wine vinegar in the slaw and sweetened it with just a half packet of stevia powder. They loved it! I also used fat free refried beans so I didn't have to mess with pureeing the beans. I did have the jalepenos on the side so I could put them on mine and my husband's. Very simple to make, and really, really delicious! I will make this again, no doubt!

Love this recipe! I agree with other comments that it's filling for a healthy, low cal meal. We used refried black beans, canned atlantic salmon, fresh corn, fresh sliced jalapenos, diced tomato, diced red onion (about 1/4 onion), cole slaw and a squeeze of lime, which really made the dish. Satisfying and relatively easy to make. I burnt the tortillas the first round, they only needed to sit in the oven about 5-7 minutes.

This is a simple recipe but, it could have used a kick. I really enjoyed it but, next time I will be adding some more jalapenos. It was a fabulous mix of flavors/texres and i would defnilty make it again.

Really tasty and very filling for few calories. I made some Spanish rice for the rest of the family to round out the meal. The lime made a big difference. I almost added some salt, but the lime juice was a better choice. I also did add on tablespoon of oil on the coleslaw, but divided over 4 portions I didn't feel too guilty. Would make this again, possibly with shredded chicken, or cooked ground turkey.
