In a hurry? These satisfying quesadillas take just 15 minutes to make. We like them with black beans, but pinto beans work well too. If you like a little heat, be sure to use pepper Jack cheese in the filling. Serve with: A little sour cream and a mixed green salad.

These are a new staple at our house. The quesadillas are very flavorful and EASY to make.
To cut Salt .. Try this -- Make your own salsa and boil your own beans ... or you can check your grocery store for a low sodium can of black beans.. and check the sodiuim content on the cheese you buy.
How can you cut the sodium? The salt level is way too high to be "healthy."
