In a hurry? These satisfying quesadillas take just 15 minutes to make. We like them with black beans, but pinto beans work well too. If you like a little heat, be sure to use pepper Jack cheese in the filling. Serve with: A little sour cream and a mixed green salad.

Very tasty and quick. I work from home and I made this in less than 15 minutes today for lunch. I made enough of the black bean mix to make tomorrow for lunch.


This tasted great! My only problem was that it all fell apart pretty quickly. I would probably make them a burrito next time. I added a little extra cheese and some corn, which I liked a lot. Really easy and quick to make, and they're ingredients I already have. Thank you!


These are AMAZING!!! I used a plain white flour tortilla though. I LOVE this recipe. If you've got it on hand, this is great with a squirt of lime juice just before serving.

Do i have to cook the beans in some way before i mix the ingredients together??
