these were only average in my opinion. i did find them dry, but i think that was because they were over cooked. i also didnt find them spicy at all. i will make them again and add much more chili powder and maybe a chopped chili into the bean mix. i did like that they were so cheap and easy to make, a real store cupboard meal, and they did come out nice and crispy and kept the round shape. i will make them again, but with a few changes.

We really enjoyed these and they also froze well. We like spicy foods so next time I plan on adding a jalapeno to the recipe or using chipolte chili powder. I didn't have enough of the breadcrumb mixture but that was an easy fix. Will make these again!

I thought these were great.... no problems..... Although the fiber and protein are high, I still substituted 1/4 C TVP(textured vegetable protein)and then used the 1/3C breadcrumbs........... My husband really liked them and (thanks to fiber,etc.) was not hungry later, and would like to have them in future. Yea !

These are a great vegetarian meal. I can't get them to stay in balls like that picture though they always flatten out when I cook them.

I had these and some of the barbecue pulled chicken left over one night and made burritos with them and it was fantastic!

The taste was wonderful, but I am confused. Mine were definitely not dry and I did seed my tomatoes. They were not firm enough. Kinda like forming refried beans into balls and heating them. Shouldn't croquettes be breadier?

I made it for my fiance and I last night and it was great, normally we don't have vegetarian dinners, but both of us really enjoyed it and had it for lunch the next day as leftovers.

These were very good and as someone else mentioned, no complaints (just accolades!)from my "no meat is not a meal" husband! One thing is that when breading I ran out of breadcrumbs so I think you need more than 1/3 cup. I'd rather throw some out than run out. And I didn't find these either too moist or dry (and the corn didn't dry out) but I seeded my tomatoes.

This was delicious!!! I added in some onions as well and the overall flavor and consistency was fantastic. I baked them in the toaster oven and they came out just fine. The first few that I took off the baking tray lost their round croquette shape, but once they sat a few minutes they were able to maintain their shape.

Big hit! I added red onion, jalapenos and lime juice to the salsa, but eliminated the avocado(made guacamole instead). It is definitly a keeper.

The salsa was amazing, but the croquettes were bland. I didn't put in chili powder because I don't like spicy. What can I replace it with?
