Yuck! I'm a huge fan of EatingWell recipes but these were gross. I really like black beans but I thought they needed something else...I was also not a huge fan of how moist they turned out- the texture was quite off-putting. I made no adjustments, sticking to the recipe. My husband suggested I throw out the leftovers- and he will eat anything! I am so surprised at all the positive reviews!
Black Bean Croquettes with Fresh Salsa
From EatingWell: January/February 2008
Staples like canned black beans and frozen corn transform into spicy croquettes in mere minutes. Serve with warm corn tortillas, coleslaw and lime wedges.

These were great. To save time I used my favorite fresh (not jarred) salsa from the supermarket instead of following the recipe to make my own. This cut my ingredient list in half and also was less expensive.
This recipe is delicious. i made it two days ago, followed the directions to a t, and didn't have a problem with moistness or shape retention. It could have had a bit more flavor, but over all it was amazing. I'm actually making it again tonight to share with a different friend, i think tonight i'm going to add some onion, jalapeno, and maybe lime juice tonight.
We made this and it was delicious! Heeded the other comments and used only one can of beans. Added lots of veggies- jalapenos, garlic, onions, tomatoes, and corn. One little tip-- we used Shake'n'Bake "Hot & Spicy" crumbs instead of regular breadcrumbs, and it was a very flavorful addition! Give this a try! :)

These have become a huge staple in our house. I increased the spices and added some chopped jalapeno. My son thinks they're better than anything he's had at a restaurant.
