Bitter Greens Salad with Anchovy Dressing
From EatingWell: July/August 2013
Here’s a simple green side salad recipe that matches bitter greens like escarole and radicchio with a pungent anchovy dressing. You could also use frisée, arugula or even mesclun greens. It’s great with pizza or as a light side salad.
- 2 tablespoons sherry vinegar
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon anchovy paste or minced anchovy fillet
- 4 cups thinly sliced bitter greens, such as radicchio and/or escarole
- 1/3 cup shredded Asiago cheese
- Whisk vinegar, oil and anchovy in a large bowl. Add greens and Asiago; toss to coat.
