Fiber-rich beans stand in for the beef and pork in this surprisingly rich-tasting vegetarian take on pasta Bolognese. Without the meat, the dish has only a third of the fat and 80 percent less saturated fat. To make the perfect meal, serve with a peppery arugula salad and warm, crusty Italian bread.

Surprisingly good! I'm not a huge bean fan, but my family is trying to eat healthier so I tried this recipe. It was delicious, both my husband, a meat & potato guy, and my 10 year old loved it! Definitely adding to the rotation. I did add 1/4 - 1/3 c of tomato sauce to the sauce & it was perfect!

It was a really delicious meal! As a vegetarian, my boyfriend and I are finding it a little difficult to cook meals that we both enjoy. This used a lot of ingredients we already had and it was fairly easy to make. Excited about the leftovers and will definitely make it again!

I just made this and I used fire roasted diced tomatoes - It is a keeper, I will make it again and again

It came out great an alternative to a meaty meal. The guest were overpowered by the white wine though. And next time I will use the suggestion of adding tomato sauce.
